VEGAN CHERRY NUT MOUSSE TART
Eating foods that are raw is a great way to maximize your nutritional intake while giving your metabolism a boost. Focusing on both coconut oil and coconut cream ingredients provides a medium chain fatty acid that feeds your brain, puts your fat metabolism on course, and also helps nourish your lower GI tract to better absorb nutrients and aid in healing the cells (think bloating, gas, inflammation, etc. issues). Coconut has the goods to make you feel better form the inside out.
INGREDIENTS
For the Crust

12 dried dates (pitted)
-
1/2 cut smokey salted almonds (I used Smokehouse Nuts)

2 tablespoons flax seeds
-
1 tablespoon coconut oil

For the Mousse

2 ripe bananas
-
3 tablespoons of cocoa powder
-
2 tablespoons of maple syrup
-
2 teaspoons of vanilla
-
1 can coconut cream (no liquid, just the topping if using coconut milk-full fat but it will be runny)
PREPARATION
CRUST DIRECTIONS

Combine above ingredients and use a blender or food processor until mixture comes to an even consistency.

Place in tart pan and press firmly on bottom and sides to create a crust

MOUSSE DIRECTIONS​

Combine ingredients until smooth texture is formed, I used my food processor once again.

Place on top of crust.

Place in refrigerator for at least an hour.

Top with 1-2 cups of fresh, pitted cherries.

Back in refrigerator or freezer depending on how you would like to serve (frozen or just cool).
