CHICKEN & GRAPE SALAD
This is a light meal and great for a protein based "salad" that can also be used for a topping on a bed of greens, like iceberg lettuce, arugula, kale or a combination of many greens. The sweet flavor from the grapes and bitter notes from the chives, celery and blue cheese really provide a burst of flavor and it's hard to hold back from a second serving. I have fond memories of this dish as it was made (my mom first created it and I have since adapted it for additional gut serving goodness) when my sister was getting ready to say her "I do's" back in 2000! I hope you can enjoy it and create your own amazing memories!
INGREDIENTS

2 - 6 ounce- Roasted Chicken Breasts, cooled & chopped

2 Cups Grapes, sliced (red or green)

3 Celery Stalks, sliced

1 Cup Plain Kefir (or yogurt)

4 ounces Blue Cheese Crumbles
-
¼ Cup Pine Nuts or Almonds (optional- nuts of choice)

1 Bunch of Fresh Chives, chopped (save 2 sprigs for garnish)

¼ tsp Salt & Pepper

1 Teaspoon Dried Minced Garlic (optional)
PREPARATION

Chop or cube roasted chicken breasts, slice grapes in half, and slice celery into bite sizes

In a small bowl, mix together kefir, fresh chives, salt, pepper and minced garlic.

Add chicken, grapes, and celery to a medium size bowl, then add the kefir mixture and gently mix together.

Add blue cheese crumbles and nuts, gently mix together to evenly distribute

For a garnish, add a sprig or two of fresh chives or chopped chives
