BLUEBERRY DONUT
My kids and father often ask for donuts on the weekend and I haven't found a place that offers quality and wholesome ingredients that are also gluten-free. This has added to many sighs and frustrated conversations...so I decided to make them! So far...my kids keep asking for them. My dad on the other hand, as long as he gets a daily treat (this included), he shows up to "help"...
So for these, I am baking them, swapping out the fat for applesauce, and having a healthy dose of blueberries to the mix. Depending on season, you can decrease the sugar as the blueberries are a perfect sweetener, too. They also go great with your morning beverage, like tea or coffee!
INGREDIENTS

¼ Cup Milk (I used Blueberry Cashew Milk)

1 teaspoon Apple Cider Vinegar

1 teaspoon Vanilla Extract

1/3 Cup Agave (Maple Syrup or Honey would work too)

3 ½ Tablespoon Applesauce

1 Cup Gluten-Free Flour (All Purpose Flour option)

1 teaspoon Baking Powder
-
¼ teaspoon Sea Salt

½ Cup Blueberries (frozen or fresh)

Zest of 1 Lemon
PREPARATION

Preheat oven to 350 degrees F.

In a bowl, mix the wet ingredients: milk, apple cider vinegar, vanilla, agave, and applesauce.

In a large bowl, add the dry ingredients: flour, baking powder, and sea salt.

Gently add the wet ingredients to the dry ingredients, gently mixing them until they are well combined, but not over-mixing. Option to also fold in the blueberries before pouring batter.

Pour batter into the donut pan.

If you did not add the blueberries before, add the blueberries on top of batter in the pan. You can submerge them into the mold too.

Top with lemon zest

Bake for 15-20 minutes or until toothpick inserted inside the donut comes out clean.

Remove from oven and let cool for 5 minutes & release from pan onto a cooling rack.
